potato salad is such a delish and super simple summer dish. for lunch the other day i made a really yummy version that i think you might like. first i boiled some organic fingerling potatoes and one organic free-range egg, 'til the potatoes were easy to poke with knife.
while they were boiling, i chopped up some fresh green onion and carrots.
then i made a dressing of organic dried dill, organic extra virgin olive oil, organic rice vinegar, organic mustard, a dash of hot sauce, and salt and pepper.
just as the potatoes were finishing up, i added a handful of organic frozen peas to the boiling water, just to defrost them. then i chopped everything up and added the sauce.
so good. i want more!
