ariel's making ... gingerbread piglets


it's kinda chilly tonight, so it's time to break out my childhood noah's ark cookie cutters and make some gingerbread piglets.


this recipe was originally from my auntie patti, who wrote it on a recipe card for me many moons ago, but i've added my own special twist to it -- fresh, spicy ginger.


to make the dough you'll need:


1 cup organic butter at room temp
1 cup organic sugar

cream these two together

stir in:

1 cup organic molasses
1 organic egg
2 T vinegar

mix and then add to the wet mixture:

5 cups organic whole wheat flour
1 1/2 t baking soda
1/2 t salt
1 t cinnamon
1 t clove
lots and lots of grated fresh ginger

form a ball with the dough, wrap in plastic and let it chill for several hours -- or overnight. i made this batch of cookies with dough i made a few days ago that i just had chillin' in the fridge 'til i was ready to bake them.


on a floured surface, roll the dough out to about 1/4 inch thick.


cut into cute shapes.


place on a greased cookie sheet (i used olive oil) and throw them in the oven at 375* for 6 minutes.


remove from the oven when they're golden brown and the smell in the kitchen is starting to make you drool.


serve with a tall glass of organic milk and eat continuously!
